I made this today and while I have to admit that I was very skeptical, I also turned out to be so pleasantly surprised. It was delicious. I am not a vegetarian or a vegan, but will definitely be making this again. It is a great way to sneak more vegetables into my diet.

I have tried several carrot bacon recipes. This is by far the best recipe I have found and is now my go to. The only thing I did different was I used maple syrup aged in bourbon barrel.
