I love this recipe! It’s easy, fast and delicious!

I have a diabetic toddler that also loves these pancakes which, even with the full 2 Tbsp of sugar, are still lower carb than any recipe I’ve been able to find! Yielding 12 pancakes, each pancake contains only 12.42 carbs!

Pancakes are always a bit of trial and error. Be sure the batter is not thick and heavy, it must flow evenly and smoothly to a thickness of 1/4 inch in the pan. If too thick, add a bit more milk and mix again. Don’t be afraid to use water if milk is not available.

This is a great recipe – my children scarfed down 4 each, which I had not planned for, so there were only 4 left for my husband and me to share. I will make 1.5 the recipe next time. I have a very similar recipe that I have made for about 25 years, but we had moved recently and we could not find the cookbook – my husband said these pancakes were better (Grrr!) Thanks very much!

Not sure about the pancakes

I just tried this recipe for the first time and didn’t really enjoy it too much. I’m not sure if I made it the wrong way. I omitted the sugar and the salt so maybe that’s why, but I found the texture to be a bit rubbery!

My Version of this Recipe

Use 1 1/2 cups flour
Add 1 teaspoon vanilla (I use imitation, its cheaper)
Sub out the real egg for 1/3 cup egg beaters
Sub out sugar for 5 tablespoons splenda
Sub out salt for dash of No-Salt
Add 1/2 cup Chocolate chips
Sub out milk for Evaporated canned milk

When you make pancakes, it is important to know that your first pancake will not be perfect. Heat your pan on a medium heat with a tablespoon of oil in the pan. I use a small sauté pan that is the size of the pancakes I want to make. You want to pour the batter where it is about a centimeter. It WILL FLUFF UP! Once you’ve poured the batter in the pan, watch the air bubbles. Once there are air bubbles in the center, flip it over. It is important to give both sides about the same time. This avoids batter spots in your pancakes. Once you remove the pancake, your next one should be perfect! Just remember, it is only pancakes. Don’t get upset!! 😉

Home Made Pancake Best In World !

I made a few adjustments to the recipe and I find it tastes alot better and cooks alot better.

1 1/4 cups flour
1/4 teaspoon baking soda
2 teaspoons baking powder
2 tablespoons sugar
1 teaspoon Cinnamon
3/4 teaspoon salt
1 cup 2% milk
1 egg ( large )
2 – 3 tablespoons oil ( virgin olive oil works better then sunflower )

Mix all together and if you have a low speed mixer , mix for 1 minute while you heat a pan , just under medium heat… closer to low heat as to not burn your pancakes. these will beat any pre made pancake mix hands down.

You’ll notice this recipe ends up with a really thick batter. Which seems to result in thick pancakes that are raw in the middle. Not good!

Measure carefully, then be sure you get the proper consistency. Baking or cooking requires some previous experience. Just like changing oil in the car. Simple directions still assume you have some experience.

The pancake batter doesn’t have to be thick at all. If it is, just add a bit more milk to get the consistency you want. Very easy and still works.

Recipe needs more salt, and less flour. Pancakes came out rubbery and more of a crepe consistency. A little lemon juice may have helped with the lack of pancake flavor.
